½ cup grits

2 cups water

2 eggs

½ cup milk

½ tsp salt

2 Tablespoons unsalted butter

Dash each of black pepper, paprika, cayenne pepper, cumin (to taste)

Dash chili powder (optional)

¾ cup sharp cheddar, shredded

2 Tablespoons grated parmesan cheese


Prepare grits according to package and remove from heat. Stir butter and cheese into grits, stirring until melted.

Beat together eggs and milk. Add to grits mixture with seasonings to taste.

Pour mixture into greased 2 quart casserole dish. Sprinkle parmesan cheese over casserole.

Bake in 350°F oven 50 to 60 minutes, until puffed and brown on top and knife inserted comes out clean. Souffle will fall as it cools.

Serves 6 to 10.
